Rich and Chocolatey treats need no longer be forbidden, now that we have rediscovered raw cacao: the super-healthy predecessor of cocoa powder! Anti-oxidant rich, high in magnesium, calcium and iron, and a natural mood lifter; raw cacao really packs a healthy punch! Add to this the sweet potatoes, a great source of dietry fibre and vitamin A, these moist and tasty brownies really are a great on-the-go treat!
Ingredients:
2 Medium sized sweet potatoes, peeled and chopped
6 Tbsp raw organic cacao powder
100g almond flour
100g oat flour
60g hazlenuts
10 pitted dates, finely chopped
2 Tbsp virgin coconut oil
4 Tbsp pure maple syrup, or more to taste should you desire
Directions:
Preheat the oven to 180 degrees
Add the chopped sweet potatoes to a pan of boiling water and heat until they are softened (roughly 20 mins)
Remove from the pan and add to a bowl. Mash the sweet potatoes until smooth. Add the remaining ingredients to the sweet potato mash and stir well with a wooden spoon. Grease and line a baking tin with baking paper and add the mixture, spreading it evenly and thickly using a knife.
Add to the oven and cook for around 50 minutes, checking after 40. When a knife can be inserted and removed without any mixture on it - the brownies are ready. Allow to cool and set. Once ready, slice into squares and store in the fridge until desired.
