These spicy vegan tacos were a tasty treat for lunch! Filled with spiced tofu and vegetables and topped with lime and coriander smashed avocado. You really do not miss the meat with this dish, it is such a taste sensation!
Ingredients: Firm organic tofu broccoli florets (sliced) Diced red pepper Diced onion 3 chopped garlic cloves Turmeric powder - 1-2 teaspoons Cayenne Pepper - 2 teaspoons Cumin - 1-2 teaspoons Tiny red chilli (sliced, but optional) Tamari (or soy sauce) 2 avocados Fresh coriander - chopped 2 Fresh limes Gluten-free tacos (or home-made tacos would be even better, if you have the time!) Organic chilli sauce
Directions: De-stone the avocado and add to a bowl, then mash with a fork, add the chopped coriander and the juice of half a lime and combine the ingredients.
Heat some oil in a pan and then add the onions. Once turning a little golden, add the pepper and broccoli and stir-fry until softened. Next, crumble the tofu into the pan and stir. Add the garlic, turmeric, cayenne pepper, chilli (to taste), cumin and stir until combined. Add a little water to the pan to prevent the ingredients from sticking. Next, squeeze in the juice of half a lime and add a couple of tablespoons of tamari and stir into the ingredients.
To serve: fill the taco with the tofu and vegetable mixture, top with the smashed avocado, organic chilli sauce and chopped lime, enjoy!
