Zesty Lemon, Almond and Apricot Raw Treats!


Juicy apricots and zesty lemons are in season here in Ibiza at the moment; we were kindly given a bounty of both by some lovely clients living in the north of the island. This recipe puts the fruits to good use and they are so simple to make, as no cooking is required. With the addition of almonds, another of the island's local products, the ingredients are a marriage made in heaven, delivering powerful anti-oxidants, vitamin C and calcium for a healthy glow!

Ingredients:

225g of very ripe apricots (de-stoned)

Zest of 3/4 of an unwaxed lemon

200g flaked almonds

75g almond flour

30g sesame seeds (save some for sprinkling on at the end)

1 tbsp pure maple syrup

2 tbsp virgin coconut oil

A dash or 2 of cinnamon (to taste)

Directions:

Add the apricots, almond flour, maple syrup and coconut oil to a food processor and blend until well combined.

Add the mixture to a bowl and stir in the lemon zest, flaked almonds, sesame seeds and cinnamon.

Grease a baking tin with some coconut oil and line with baking paper, grease a little coconut oil on top.

Spread out the mixture evenly using a flat knife. Then pop the baking tin into the freezer for 25 mins (or until set).

Slice into even triangles or bars and sprinkle sesame seeds on the top.

Store in the fridge until desired!

* cooks tip: if you don't have any fresh apricots to hand, use apricot puree!
