This delicious, spiced tomato soup is a firm favourite of ours: it’s comforting and nutritious and very easy to prepare, which is ideal in the busy summer months here in Ibiza! Apparently ‘life-changing’, this soup can be served chilled like a gazpacho, for those scorching summer days, or served warm for those refreshing, cooler days, like today! Thanks @madeleineshaw #gettheglow#lifechanging #nutritious #healthy #consciouseats#vegan #meatfreemeals Ingredients: (Serves 2) 1 tbsp olive oil 4 spring onions, chopped 2 garlic cloves, peeled and sliced 1 tbsp freshly grated ginger 1 tsp smoked paprika 1 tsp ground cumin 2 tbsp almond butter (palm oil free) 400g tin chopped tomatoes 400g tin of coconut milk (use vegetable stock if you prefer a less creamy consistency) 3 tbsp tomato puree Himalayan salt and freshly ground pepper to taste Fresh basil and mixed seeds to granish Directions: Place all of the ingredients in the blender and whizz until you have a smooth consistency. Add salt and pepper to taste and whizz again. Serve cold or warm depending on the weather! Add a drizzle of olive oil and some fresh basil and mixed seeds to garnish. Enjoy, it's delish :) X
