Scrumptious Oat, Berry and Cacao Breakfast Bars


Feeling like a sweet treat? Try these scrumptious oat, chocolate and berry slices. They are made from healthy ingredients, and are so easy to whip up in no time! Great for an on-the-go breakfast bite, or for a midday snack served with iced tea.

Ingredients: 300g oats (gluten free) 300g mixed raspberries, blueberries and red currants 225ml oat milk (or other nut milk of your choice) 75g coarsely crushed almonds seeds from 1 vanilla pod 115ml agave or maple syrup Flaked almonds

For the Chocolate topping: 2tbsp Coconut oil 1 tbsp Raw cacao powder 2 tbsp Agave Syrup

Directions: Add the oats, oat milk, mixed berries, vanilla seeds and syrup to a mixing bowl. Mix vigorously with a wooden spoon, until the ingredients are combined well ( you can use a food processor if you have one). Next, add the crushed almonds and stir well. Grease a baking dish using a little of the coconut oil and then spread the mixture evenly. Sprinkle the flaked almonds over the top of the mixture. Place the baking dish into a preheated oven (180 degrees) and bake for around 20 minutes (checking after 15 to see if the middle is cooked). While the mixture is baking, add the coconut oil, agave syrup and cacao powder to a pan and gently melt the ingredients on a low flame. Taste and add more cacao or sweetener as desired. When the oat slices are cooked through and the almond flakes are browned, remove from the oven and drizzle the chocolate sauce on top. Allow to cool and serve. They are also tasty to eat when warm, as you desire!
