We are loving munching on these guilt-free brownies here at Commando Fit! The only problem is trying not to eat too many! Ingredients:
1 large sweet potato – peeled, boiled and chopped into cubes 6 dates – de-stoned and chopped 5 heaped tablespoons raw powdered cacao 50g walnuts, slightly crushed 50g grated coconut 50g ground almonds 50g oats, gluten free if possible 1 tablespoon of honey, agave nectar or maple syrup Directions: Once boiled, mash the sweet potatoes in a large bowl and add the cacao, oats, almonds, coconut and mix until all of the ingredients are combined. Add the honey or agave nectar and mix well. Add the chopped dates and walnut and give the mixture a final stir. Line a shallow cake tin with some baking parchment and smooth the mixture with a knife until the tin is full and the mixture is evenly spread. Place the tin in a preheated oven for 15-20 minutes (or to taste) Leave the brownies in the tin to cool and then slice into squares and decorate with grated coconut and goji berries. Serve and enjoy! (Try not to eat them all at once;) )X
