Today we had this warming bowl of flavoursome goodness here at Commando Fit. A Thai-style soup with courgetti instead of noodles.
Ingredients: One large courgette 2 carrots 1/2 a lime 1 tablespoon of coconut oil 2 tablespoons of thai green curry paste 1 tin of coconut milk A few springs of fresh coriander 1 red chilli (add to taste)
Optional extras: beansprouts, cashew nuts.
Directions: Simply julienne or spiralise a large courgette and set aside. Julienne 2 carrots and also set aside, whilst you heat up a tablespoon of coconut oil in a saucepan. Then add 2 tablespoons of green curry paste and the chopped chilli and stir quickly. Pour in a tin of coconut milk and 250ml of vegetable stock and leave to simmer for a few minutes, or until heated through. Add the courgetti to the pan and then serve into bowls. Adding a few coriander leaves and a squeeze of fresh lime juice. If you have any, add a few cashew nuts and beansprouts. Enjoy! :)
